Caramel is not one fixed ingredient
Some sauces are syrupy; others contain enough cream or butter to set firmly in the fridge. This recipe uses spoonable dessert sauce, not hard sweets or a thick baking filling. Stir dense sauce into the milk thoroughly before adding ice cream.
The glass swirl is measured separately so the base does not accidentally receive all the caramel. A heavily coated glass may taste much sweeter near the bottom than at the first sip. Thin lines give the visual effect without hiding vanilla.
Salt is an adjustment
Salted caramel sauce already contains seasoning. Taste both sauce and finished shake before adding more: a generic pinch can be surprisingly large for two servings. If it begins to taste salty rather than rounded, extra ice cream may dilute it, but prevention is simpler.
You do not need to cook sugar for this recipe. Homemade caramel introduces a hot-sugar process and additional cooling time. A labelled ready-made sauce keeps this a short assembly recipe and lets you judge sweetness before it meets the cold ingredients.
Avoid a sticky rim
Keep caramel away from the outside rim where it transfers to hands. Softly whipped cream and a narrow drizzle are easier to manage than a large mound of sauce. The drink should remain approachable without dismantling a stack of decorations.
What you'll need
- 280 g vanilla ice cream
- 160 ml cold whole milk
- 30 g caramel sauce, plus 2 tsp for the glasses
- A tiny pinch of fine salt, only for unsalted sauce
- 2 tbsp whipped cream, optional
Let's make it
- Check that the caramel is cool and spoonable. If warmed to loosen it, cool completely before use.
- Drizzle one teaspoon inside each glass, keeping the line thin. Refrigerate the glasses while you blend.
- Stir 30 g caramel sauce into the measured milk. Add ice cream and pulse until smooth, checking that no caramel is stuck beneath the scoops.
- Taste, adding a tiny pinch of salt only if needed. Pulse once, divide between glasses and add optional cream.
Make it your own
Omit salt entirely for plain caramel.
Coffee ice cream makes a caramel-coffee variation and may contain caffeine.
Keeping it fresh
Serve immediately. Store unused sauce according to its label. Refrigerate an untouched leftover shake promptly, covered, and use within 24 hours; its swirl will dissolve.
Allergen notes
Contains milk. Some sauces and ice creams contain egg or soya; check labels.
