Fresh ginger gives a clean warmth
Peach has a delicate fragrance that can be lost under large amounts of spice. Half a teaspoon of finely grated ginger adds warmth without turning this into a ginger drink. Grating is important because rough slices can leave fibrous fragments even after blending.
Use ripe peaches with yielding flesh. Hard peaches may look attractive but will give a sharper, less fragrant shake. The almond drink is a quiet background, while vanilla ice cream rounds off the fruit and spice. A heavily sweetened almond drink can make the combination feel less fresh.
Taste before the frozen dessert goes in
Blending the fruit, liquid and ginger first lets you assess both texture and spice. If a particular piece of ginger is very strong, you can add a little more peach before the ice cream changes the sweetness. Once the dessert is included, blend only until combined rather than continuing to chase an absolutely foam-free surface.
The lemon quantity is small because it is meant to support peach, not compete with it. If the peaches are already tangy, reduce it. A simple glass suits the drink better than a heavy biscuit rim or syrup drizzle. The flavour is soft peach followed by a little ginger warmth, and extra toppings can obscure that sequence.
What you'll need
- 240 g ripe peach flesh, stones removed
- 180 ml unsweetened almond drink
- 100 g dairy-free vanilla ice cream
- 1/2 tsp finely grated fresh ginger
- 1 tsp lemon juice
Let's make it
- Wash and stone the peaches, checking for fragments around the stone. Peel if the skin is thick, then weigh the flesh.
- Blend peach flesh with almond drink, ginger and lemon juice until smooth. Taste the base to check the ginger level.
- Add dairy-free vanilla ice cream and blend briefly until the drink is cold and softly thick.
- Divide into two glasses and serve. If ginger fibres remain, strain the fruit base before adding ice cream on the next batch.
Make it your own
Nectarines can replace peaches without changing the prepared weight.
Oat drink can replace almond drink if suitable, but check gluten status and other allergens rather than assuming it is universally allergy-safe.
Keeping it fresh
Serve immediately. Prepared peach flesh can be covered and refrigerated at 5°C or below for up to 24 hours, though some browning may occur. Keep plant drink and frozen dessert according to their labels.
Allergen notes
Almonds; check frozen-dessert allergens and milk cross-contact
